Joe Cozza Executive Chef, Twin River Casino
Joe was born and raised in Malden, MA and attended Johnson & Wales University in Providence, RI where he received his degree in Culinary Arts while maintaining Dean’s List status. Joe started his career as a line Chef at Christopher’s on the Hill and The Biltmore Providence. He then accepted the position of Restaurant Chef at Al Dente, a fine dining Italian restaurant at Foxwoods Resort Casino. While at Foxwoods, Joe was instrumental in the grand openings of seven separate restaurants.
After 10 years, he returned to the Ocean State to join the Twin River Team as the opening Restaurant Chef of Carmine’s Italian restaurant; he was also the Chef of Fado Irish Pub, and, finally, Wicked Good Bar & Grill. Joe has appeared on the Providence Rhode Show, TV Maître D’ and the Phantom Gourmet. He has been recognized numerous times for excellence in service and dining. Joe brings with him a wealth of knowledge with over 20 years of culinary and leadership experience.

Fred & Steve’s Steakhouse is the perfect platform for Chef Carlos to showcase his grilling techniques and innovative approach to the traditional steakhouse experience.
DaMoura originally joined the Lincoln Park family in 1994 as a line cook in the Queen of Clubs Restaurant, which overlooked greyhound racing. He continued to work at Lincoln Park for several years as he completed a four-year Business Administration degree from Johnson & Wales University.
With the sizeable Twin River casino expansion plans in 2005 Chef Carlos had an opportunity to stay on staff and was later promoted to head chef at Fred & Steve’s Steakhouse in 2008. He has continued to astonish his guests with his Portuguese and Creole influenced steak and seafood specials.
Jeremy Kochanek
Head Chef, Wicked Good Bar & Grill
Jeremy is a native Rhode Islander who studied Business Management at the Community College of Rhode Island. He began his professional career in retail management but gravitated to the culinary arts over 10 years ago. Jeremy originally joined the Lincoln Park family in 2006 as a line cook for City Scapes and remained a line cook through the Twin River Casino expansion and grand openings of both Fado Irish Pub and Wicked Good Bar & Grill. Jeremy was promoted to Sous Chef of Wicked Good Bar & Grill in 2011 and took over as Restaurant Chef in 2015. Jeremy has appeared on The Rhode Show on multiple occasions and has been recognized numerous times for excellence in service and dining. Jeremy is motivated by his passion for food and dedication to customer satisfaction, both of which is evident in his creative and popular seasonal menus.
Daniel DiPietro
Head Chef, Shipyard Pub
Chef Daniel DiPietro’s 12 years of restaurant experience combined with a unique perspective & enthusiastic approach has carried him through his varied career. His passion for quality & guest service is now being showcased at the Shipyard Bar & in Twin River’s VIP Lounge. Starting at the bottom as a dishwasher and busser at a small Cafe when he was 14 & having been instructed only in kitchens working directly with Chefs across Rhode Island, Chef Dan has firsthand experience with multiple foreign & local cuisines. You will typically find a mix of different techniques in both his cooking & leadership styles. Chef Dan strongly believes that quality of food lies within the cook’s strict & consistent attention to detail & a refined foresight of the guest’s expectations. DiPietro has worked at numerous local Italian, American, & Japanese restaurants in the state as well as climbing through the ranks of Twin River’s world class dining facilities, & has been featured on the Rhode Show as well as Dirty Water TV.

Head Chef, Banquets
Todd was raised in Hopkinton MA and graduated from Newbury College in Brookline, MA receiving a Culinary Arts degree. He has been the Executive Chef at several Massachusetts exclusive golf clubs including Weston Golf Club and Hopkinton Country Club, where he designed the kitchen with renowned restaurant architect Kevin Brown. Todd has been in the food service industry for over 25 years, with varied cuisine styles and understandings in his repertoire. Todd joined the Twin River team five years ago. He started as the Sous Chef at Twin River Casino’s premier steakhouse, Fred & Steve’s, where he was for three years, and promoted to the Banquet Chef at Twin River Casino two years ago. He has appeared on the Providence Rhode Show and entertained guests with numerous food demonstrations in the Twin River Event Center. Todd’s understanding and knowledge of ever changing food trends keeps the guests at Twin River satisfied and returning for more.

Originating from Flint, Michigan in 1969, this top selling American rock group of the 70’s is “COMIN’ TO YOUR TOWN TO HELP YOU PARTY IT DOWN”. Grand Funk Railroad is extremely excited to be touring in 2020 marking a 51-year milestone. After playing to millions of fans on the band’s tours from 1996 to 2019, Grand Funk’s SOME KIND OF WONDERFUL TOUR 2020 will continue to reach both new and long-time fans.
Known as “The American Band”, the high-energy five-piece group will play forty shows all over the USA this year. Grand Funk Railroad includes original founding members Don Brewer (vocals and drums, writer and singer of the multi-million selling hit, “We’re an American Band”) and bassist Mel Schacher, “The God of Thunder”. Joining Don and Mel are true “All Stars”. Singer Max Carl is a rock veteran from 38 Special. Max penned and sang 38’s biggest hit “Second Chance” and was co-founder of California’s legendary Jack Mack and the Heart Attack. Don refers to Max as “the best blue-eyed soul singer on the planet. Lead guitarist Bruce Kulick is best known for his 12 years with KISS and also has credits with Michael Bolton, Meatloaf and Billy Squier. (KISS members Gene Simmons and Paul Stanley were influenced early on by Grand Funk). Keyboardist Tim Cashion has a master’s degree in music from the University of Miami. No one can argue BS&T invented a new style of music. Blood, Sweat & Tears is not the first band to ever use a horn section, but they are the first to fuse it with rock, jazz, and some blues thrown in for good measure. From the first ensemble in the late sixties practicing in a loft on Bleeker Street in New York’s Greenwich Village and having crowds clapping on the street below between songs, founding member and drummer Bobby Colomby knew they were on the right course.
Since then, the band has never stopped touring for over 50 years. Their second album self-named “Blood Sweat & Tears” was a success, rising to the top of the charts for 7 weeks and yielding 3 top 5 singles. The album received the Grammy Award for “Album of the Year” in 1970 beating out the Beatles’ “Abby Road”. That album went on to earn quadruple Platinum status with sales well over 4 million units.
